Other recipe: The original Colusa Duck
Breaded perch fillets
Ingredients:
- 1 egg
- 1 cup of milk
- 1 cup flour
- 1 tablespoon Cajun Spice
- 1 tablespoon Garlic Salt
- 1 tablespoon Lemon Pepper
- 12-15 Perch fillets (skinned and de-boned)
Beat egg and milk together in small bowl
Mix dry ingredients together in sealable plastic bag
Dip 5-6 fillets in egg/milk mixture, and place in bag with dry ingredients
Shake bag until fillets are completely coated
Set fillets aside
Heat 1/4 inch of Virgin Olive Oil in skillet on medium high
When oil is hot, carefully place fillets in skillet, and cook for 2-3 minutes on each side, or until golden brown
Repeat for remaining fillets
